Sprouted Wild Rice Salad s

Ingredients

2 1/2 cup Wild rice uncooked
1 cup Bell pepper - red diced
1 cup Corn fresh or frozen thawed
2/3 cup Green onion chopped
1 cup Avocado diced
Olive oil cold pressed
4 tb Parsley or cilantro minced
3 tb Maple syrup
1/2 cup Lemon juice fresh
3 tb Braggs amino acid
Mixed greens optional


 
Instructions
Barely cover rice in water and soak 8 hours or overnight. Drain and rinse. Stand at 45° angle in a screen or mesh covered jar. Rinse mornings and evenings for 3 days or until grain has split and is soft.

in large bowl combine sprouted rice, bell pepper, corn, green ionin, avocado and herbs. Toss to mix.

In small bowl, mix maple syrup, lemon juice and liqued aminos until well blended. Add to rice mixture and toss to coat. Cover and let stand for 1-2 hours so flavors can develop.
Serve over mixed greens if desired.
