Healthy, Delicious Nachos! Can be made Raw or just Vegan.

Ingredients

-- PICO DE GALLO --
2 Jalapeno peppers seeded and finally chopped
1 medium Onion chopped
5 Tomato diced
1/4 cup Cilantro chopped
1 tsp Vinegar
2 cloves Garlic minced
-- REMAINING INGREDIENTS --
1 can (16 oz) Black beans drained
1 16 oz Non Fat Cottage cheese optional
1 squirt Lemon juice
1 bag Corn chips


 
Instructions
PICO DE GALLO
2 seeded jalapenos peppers finely chopped
1 medium onion, chopped
5 tomatoes diced
1/4 c chopped cilantro
1 tsp vinegar
2 cloves garlic, minced

REMAINING INGREDIENTS
1 15 oz can black beans, drained
1 16oz non fat cottage cheese (put in blender and add quirt of lemon juice and blend until creamy.
OR make non dairy Sour cream (see recipie)
1 Bag Baked Corn Chips (use raw chips for a raw dish)

INSTRUCTIONS
Make Pico De Gallo by mixing first 6 ingredients. set aside. build nachos by placing chips on platter. add drained beans. next cottage cheese and then Pico de Gallo.
