Ingredients

1 cup Brown rice
3 cups Corn frozen
2 cans Black beans
2 cans Pinto beans
1 can (12 oz) Tomatoes and Green Chilis diced
1 lb Soy cheese shredded
2 package Tortillas - Whole Wheat


 
Instructions
Cook 1 Cup Brown Rice in pan according to directions.
(Approximately 40 minutes)

Cook 3 cups frozen corn.

Place following in colander and rinse and strain:

2 cans black beans
2 can pinto beans
In large mixing bowl combine following:

1 Can diced tomatoes & green chilies
Cooked Corn
Drained beans
Cooked Rice
1 lb shredded soy cheese (optional)

Roll mixture in
2 pkgs whole wheat flour tortillas.
Wrap in plastic wrap.
Can be frozen and heated in microwave.
