Ingredients

-- CRUST -- optional
1/2 cup almonds. soaked 4 hours
1/2 cup pecans soaked 4 hours
1/2 cup sunflower seeds soaked 4 hours
1/2 cup pumpkin seeds soaked 4 hours
6 dates
1 Dash cinnamon
-- FILLING --
4 large limes
2 cups coconut meat ( 1 coconut)
1 1/2 cups dates
1/4 cup fresh orange juice
1/4 cup fresh lime juice
1 TB lime zest
1 TB agar-agar (thickening agent.. Try psyllium)


 
Instructions
Place all crust ingredients in food processor and process.

Spread mixture into 8 inch glass pie pan.

Place all filling ingredients in processor and blend to creamy consistency.
Pour filling into crust and place in refrigerator. Let chill for 1 hour before serving.
