Black Bean Vegetable Soup s

      Yields: 8 Servings

Delicious slightly sweet bean soup.

Ingredients

1 tb Canola Oil
1 Onion chopped
1 clove Garlic minced
2 Carrots chopped
2 tsp Chili powder
1 tsp Cumin
4 cups Vegetable Stock
1 can (12 oz) Black beans
1 can (12 oz) Stewed Tomatoes
1 can (12 oz) Black beans
Add to the pot.


 
Instructions
1. Heat
1 TB oil
over medium heat in pot.

2. Add Following:
1 Chopped Onion
1 Clove Garlic, Minced
2 Carrots Chopped

Stir occasionally for 5 minutes till onion is softened.

3. Add Following:
2 tsp Chili Powder
1 tsp Cumin

Cook and stir for 1 minutes.

4. Add Following:
4 cups Vegetable Stock
1 Can Black Beans

5. Puree in blender or food processor:
1 Can Stewed Tomatoes
1 Can Black Beans

Add above to pot.

6. Reduce heat and simmer 10-15 minutes till carrots are tender.
