Instructions 2 romaine lettuce hearts 2 small plum tomatoes diced 1 cucumber diced 1 carrot peeled & shredded 1 small yellow or 1/2 red onion chopped 1/4 cup extra-virgin olive oil 2-3 TB red wine vinegar 1 TB sugar Coarse salt and pepper Place all veggies in bowl. In separate small container, place oil, vinegar and sugar. Shake till sugar dissolves about 1 minutes. Pour over salad. Season with salt and pepper to combine. Toss and serve.
