Apple Spice Cake - Raw s

6 Granny Smith Apples (or other firm apple) peeled and shredded
1 cup Almonds soaked
1 cup Dates soaked
1 cup Currents or Raisins
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1 pinch Cloves
-- ICING --
1 cup Dates soaked
1/2 tb Cinnamon


 
Instructions
Gently squeeze juice from apple shreds and reserve liquid.
Mix apple shreds with currants and spices.
In food processor grind almonds. Add to apple mixture.
Puree soaked dates. (binder and sweetner) Gently amix in.
Form into cake. Refridgerate to set. Turn onto plate (if you used cake pan)

Icing
In food processor puree dates with cinnamon till smooth.
Spread over entire cake. Garnish with almonds if desired.
