Apple Cranberry Bread Pudding s

Ingredients

2 medium Apples peeled and grated
4 cups Bread - whole grain cubed
2 1/2 cup Soy milk
1/2 cup Cranberries
1/2 cup Raisins
1/4 cup Maple Syrup
1 tb Arrowroot powder (or cornstartch)
1 1/2 tsp Cinnamon
1/2 cup Walnuts chopped


 
Instructions
Preheat oven 350.

2 medium apples, peeled and grated
4 cups cubed whole grain bread
2 1/2 cup soy milk
1/2 cup cranberries
1/2 cup raisins
1/4 cup plus maple syrup
1 tb arrowroot powder (cornstarch)
1 1/2 tsp cinnamon

1/2 cup chopped walnuts


Combine all ingredients EXCEPT walnuts.

Place mixture in 2 quart round baking dish. Sprinkle walnuts over top.

Bake 45 minutes. Let cool 20 minutes before serving.
