Ingredients

1 lrg Acorn squash
4 tablespoons Dried apricots diced
2 tablespoons Raw cashews chopped
1 15oz Crushed pineapple Juice reserved
2 tablespoons Raisins
1/4 teaspoon Cinnamon optional


 
Instructions
Cut squash in half and remove seeds.
Bake facedwon in 1/2 wter for 45 minutes at 350.

While baking, cover apricots in a bowl with the pineapple juice. Add the crushed pineapple, raisins and cashews on top. Let it soak.

After squash is cooked mis up the fruit in the bowl and schoop it into each squashes center. Wrap up in foil and bake for 30 more minutes.

Opt directions:

Sprinkle with cinnamon and bake 5 more minutes
